This Watermelon Vodka Spritzer is a quick, refreshing summer drink recipe you’re going to absolutely love! Top it with fresh mint; it’s amazing.
Guys, I’m not gonna lie. It’s been a rough week at Savory Simple headquarters. The storm of the year blew into DC on Friday and knocked out our power, unexpectedly, for days. Heat indexes have been well into triple digits. After 2 nights of misery followed by visits to a hotel and my parents house our power has finally been restored. But it really threw off my week. I had to postpone upgrades to my website, toss tons of food, cancel plans… and most of all I’m just tired. Heat and chaos can be surprisingly draining.
The one high point of my week was stopping by a roadside fruit stand and finding a huge seedless watermelon. Â It’s probably one of the most refreshing fruits, you know? (On a side note, you also really need to try my watermelon salsa recipe. Talk about refreshing!)
So this is my drink to celebrate Friday and electricity.  A few friends and acquaintances are still without power, one week later.  This watermelon vodka spritzer is dedicated to them. Stay cool!

Great idea! I have an abundance of cucumber from my garden right now. I might try this technique with them (removing seeds and skin). Sounds refreshing :)

Sorry about your power and all the weather-related chaos! It’s never fun dealing with scary stuff like that. In other news, this spritzer looks perfect for kicking back and relaxing after a hellish week. You deserve it!

I hope things get back to normal up there soon. This looks amazing.

I understand what you went through! A couple in our gourmet group, originally from here, live in Columbus, Ohio. The had to delay their trip back to Columbus because they had no power.
This sounds like a perfect way to take the ‘edge’ off ;)

Glad to hear you are fine…hope your friends power comes back soon…never realize how dependent we are on electricity until it’s gone….we are so blessed to live in a place where we so much. My parents are from India and they have time periods where there is no electricity..just a part of life for them.
This watermelon sprtizer looks so refreshing..my boys love watermelon. This would be great for them (without the vodka)!

I love that you’ve been experimenting with watermelon cocktails, too! We did a watermelon-coconut daiquari last week and it was yummy. Hope you’re nice and cool now!

Summer weather in the north west is always so placid, I forget other places can still suffer from natural calamity from June to September! I hope your friends get their power back soon — having to deal with nothing cold in the fridge and no AC for a whole week in the scorching heat… ugh!
The watermelon spritzer looks awesome (not to mention that you deserve a drink after all that fiasco)!

Sounds fantastic! The heat has been unbearable in Indiana, and this seems like a must-try to cool any of these 100+ degree days.

Love this! And I’m so glad for you you have your power back. What a rough week indeed for those in your area and Virginia…all those who had power out in this extreme heat.

I’m so sorry to hear that you had to endure that heat.. what a bizarre year for storms and weather.. once again the east side of the nation is sweltering while we sit in rain and clouds. (At least this week is supposed to be warmer!) On a bright note.. watermelon is the ultimate “cooler-downer” (is that a word, lol?) and this looks spectacularly refreshing!!
