This Watermelon Vodka Spritzer is a quick, refreshing summer drink recipe you’re going to absolutely love! Top it with fresh mint; it’s amazing.

Guys, I’m not gonna lie. It’s been a rough week at Savory Simple headquarters. The storm of the year blew into DC on Friday and knocked out our power, unexpectedly, for days. Heat indexes have been well into triple digits. After 2 nights of misery followed by visits to a hotel and my parents house our power has finally been restored. But it really threw off my week. I had to postpone upgrades to my website, toss tons of food, cancel plans… and most of all I’m just tired. Heat and chaos can be surprisingly draining.
The one high point of my week was stopping by a roadside fruit stand and finding a huge seedless watermelon. Â It’s probably one of the most refreshing fruits, you know? (On a side note, you also really need to try my watermelon salsa recipe. Talk about refreshing!)
So this is my drink to celebrate Friday and electricity.  A few friends and acquaintances are still without power, one week later.  This watermelon vodka spritzer is dedicated to them. Stay cool!
Watermelon Vodka Spritzer
Ingredients
- 1 cup diced, seedless watermelon
- 1 shot vodka
- juice of 1/2 a lime
- pinch of salt
- 1/4 cup seltzer water
- Optional: mint for garnish
Instructions
- Combine the watermelon, vodka, lime juice and salt in a blender. Puree until smooth.
- Add seltzer water.
- Garnish with mint (or blend the mint directly into the drink).

This is perfect timing! We bought a giant (GIANT!) watermelon and have run out of things to do with it until now! ;) ANd I hear you on the storms – I’m in FL and we had that storm roll through here about a week ago and I thought my house was gonna float away!

What an incredible week! We had a freak windstorm in December and had a similar power outage. I just suffered with the idea of throwing out all that food.
