Happy Monday! I wanted to start off by letting you know I’ll be taking over the Wyman’s of Maine Instagram account this week to help promote their #ResolutionRebound campaign. I definitely need to refocus on healthier eating; Jeff’s out of town and I have been going a bit overboard on the junk food. I also let myself fall out of the habit of regular exercise this winter, but I’m starting to pick up the pieces. Anyway, this week is an excellent time to refocus my efforts. This recipe highlights wild blueberries, which I fell in love with last year on my visit to Prince Edward Island. They’re perfect for this time of year since I’m craving the fruits of spring, but it’s too early for cultivated berries, at least where I live. Wild blueberries are flash frozen at their peak freshness and nutrition, and they work beautifully in salads, smoothies, drinks, and desserts. I bought a gigantic bag, so expect to see them in a few more recipes soon (though I’ll admit I’m thinking about using them in one that isn’t exactly geared toward a resolution rebound).
Wyman’s has teamed up with Ninja to give away a year’s worth of fruit + a Nutri Blender! The contest will run from March 20th through 24th, and a winner will be announced on the 25th.
Contestants must be 18 years of age or older, and have a valid US shipping address.
- 4 cups Wyman's frozen wild blueberries, divided
- 1 liter seltzer water or club soda
- ¼ cup fresh squeezed lemon juice (approximately 3-4 lemons), or to taste
- 3-4 tablespoons honey, or to taste
- Optional: a handful of fresh mint leaves
- Place 3 cups of wild blueberries in a medium saucepan with ¼ cup water (leave the remaining blueberries in the freezer). Turn the heat to medium low. Stir periodically for 5-10 minutes, until liquid has filled the saucepan and the mixture is just beginning to steam. Remove from the heat.
- Pour the juice through a fine mesh strainer into a bowl, gently pressing the blueberries to release as much juice as possible from the skins and pulp. Discard the solids.
- Place the bowl in the refrigerator or freezer for several minutes until the juice is cold.
- Fill a large pitcher with several handfuls of ice, followed by the seltzer water. Add the wild blueberry juice, lemon juice, and honey, adjusting the flavors to taste. Add the remaining frozen blueberries as well as the mint, if using.
