Measure the cinnamon, ginger, cloves, nutmeg, and allspice (if using) into a small bowl.
Mix together with a fork or small whisk until completely blended.
Use immediately or store at room temperature in an airtight container.
Allspice has notes of cinnamon, nutmeg and cloves, making it a nice compliment to pumpkin pie spice, though you can technically omit it. I wouldn't run to the store and purchase it just for this recipe, though it's a wonderful spice to experiment with in both sweet and savory dishes!
