How do you do it?  How is it possible to interweave a recipe about duck with the horrors of cancer? I’ve lost loved ones to the disease and nearly everyone has or will at some point.  I was recently asked to join several other bloggers this week in an effort to raise awareness about breast cancer.  My mind immediately went to two strong women who lost their battles; a coworker and a good friend.  In 2006, my friend died from Leukemia, a form of blood cancer.  She was 24 years old.  Is her story even appropriate this week? There is no such thing actually is a Leukemia Awareness Month but it gets no publicity.  I think every story is worth telling, whether it’s breast cancer, lung cancer or leukemia.

Creamy Millet with Sweet Corn and Chives ~ Savory Simple

Have you ever tried millet?  I had never had it before this year and it’s now one of my favorite whole grains.  The flavor and texture is similar to polenta and just like with polenta, it can be used in an assortment of dishes.  Millet works great as a sweetened hot breakfast porridge or as a savory side dish with olive oil, salt and veggies. Much like with risotto or quinoa, the leftovers can be used to make millet cakes.  In Japan you can actually find candied millet puffs called Awaokoshi.

So whole grains are healthy, right?  Yeah, I kind of drown out most of the health benefits in this dish with heavy cream and cheese.  I couldn’t help myself; cream and cheese are really tasty.   HOWEVER, I’ve included easy substitutions at the bottom of this recipe to create a light and healthy (though not nearly as decadent) side dish.

Watermelon Salsa ~ Savory Simple

Last week I stopped by a roadside fruit stand to buy peaches for my latest gazpacho recipe.  I have a tendency to go overboard at stands and markets so I always attempt to stick to a shopping list.  Never works. I can contain myself at the grocery store but not with local produce. So two seconds after I got to the stand I made a beeline for some gorgeous watermelon.  They’re in peak season right now, who can resist?  But with just two of us at home, bringing home an entire watermelon means that’s pretty much all we snack on for a week (or two).

I brought about half of it to a 4th of July party, which helped.  I enjoyed some watermelon vodka spritzers.  And then I came upon a recipe for watermelon salsa from Recipe Girl.  SO so good. Tri-Color Curried Potato Salad

Over the past several months I’ve been seriously attempting to cut down on the dairy in my diet. I have no intentions of cutting it out completely, mind you. I’m a big believer in moderation. It’s tough, because I love cheese, ice cream, cream sauces, soups etc. But I don’t need them all the time.

I’ve found coconut milk to be a fantastic substitution in a variety of recipes (now that warmer weather is here I might have to make some coconut milk ice cream!). For something a bit different, I decided to try using it in potato salad. I love curries made with coconut milk, and this recipe evolved from that concept. If it makes a great stew, maybe it will make a great salad! This is a much healthier alternative to vegan potato salads that use soy mayonnaise. No one will ever convince me that stuff is healthy.

If you’re not familiar with coconut milk, it’s often separated when you first open the can. The thicker, creamier coconut milk rises to the top, leaving a more watery mixture underneath. You’ll have best results with this recipe if you use the creamy stuff.

I love making chutneys.  They’re simple to make and pair perfectly with chicken or pork for a tasty weeknight meal.  Many chutney recipes use raisins; I decided to use dried cherries instead.
