So, I have some good if not slightly embarrassing news.  I went a bit overboard in anticipation of the holidays this year and lined up a giveaway for every week leading up to Christmas, starting in a couple weeks.  It feels slightly awkward because I’ve had some great conversations with many of you recently about finding a balance between doing your own thing versus working with companies. But the holidays are about celebration and this is all in good fun.  Because in the end, what’s the point if we’re not having fun?  I’ve decided to run this particular contest a bit sooner rather than later because once the snow comes I’m not sure how many popsicles anyone will be craving.  And you really need to try these vegan banana cream pops.  Zoku sent me a pop maker to review and in turn, I have decided to personally give one away so that this post isn’t simply a product review.  Details about the giveaway can be found after the recipe.

I’d been eying the colorful Zoku products for quite some time before getting my hands on one.  I’m clearly part of their target audience because I like bright jewel-tone colors and I’m also a big fan of pops in general. The marketing sold me before I even opened the box. I already had basic pop makers on hand (which I used to make these) but was intrigued by the idea of being able to enjoy a frozen pop within minutes of prepping it.  I’m a big fan of instant gratification.  The Zoku Pop Makers come in single, double and triple versions but the single is right size for me.  Mr. Savory isn’t a big fan of pops and I get bored easily.  I like the idea of making just one or two pops at a time and then moving on to a new flavor.

This thing basically works like an ice cream maker but much easier.  You put the Zoku in the freezer for 24 hours (or just leave it there so it’s ready whenever you want it).  Make and chill your pop filling and you’ll have a fresh popsicle within 7-10 minutes of pouring the liquid into the device.  Not bad for a quick, healthy snack and a definite upgrade from the standard popsicle maker.  I think you’ll really like these vegan banana cream popsicles.  They’re easy to make (only 4 ingredients!) and have no refined sugars.  It’s a guilt-free treat that doesn’t skimp on (healthy) fat or flavor.  Use the full fat coconut milk with these for the best results.

Boozy Peaches and Cream Milkshake ~ Savory Simple

You ever just have one of those days?  I know you have. Where it feels like everything is going wrong. Friday was one of those days for me.  A 30 minute meeting turned into 5 hours.  I didn’t get a chance to run all of my errands.   My oven broke.  MY OVEN BROKE.  This might be the first time I’ve missed apartment living.  Where’s maintenance???  We have to fix this crap?  Crap.

There’s only one thing to do on a day like this: ice cream.  Make that two things: ice cream and alcohol. This drink is like a party in your mouth, and it takes the edge off those days.  Bottoms up!

Fig Newtons ~ Savory Simple

Food can be such a powerful thing.  It brings us pleasure, comfort, guilt and even sadness.  It can energize our bodies or make us feel ill.  It can attach itself to memories, taking us back to our childhood or a happy day with friends.  I’ll always remember the roasted gazpacho from my wedding dinner.  I remember being in college, sitting around with friends eating Cap’n Crunch Berries while watching TV (I confess I was not much of a cook in college).  As a teenager, one of my favorite meals was tomato soup with grilled cheese.  Fancy stuff!  I put ketchup on almost everything.  My grandma made great pistachio cake and my mother was known for excellent blintz souffle and sweet pecan kugel.  As a child I definitely had a sweet tooth.  These days if I really want to transport into the past I’ll go for graham crackers, oatmeal cream pies or Fig Newtons.  Not all at once.

Gluten-Free Vegan Granola Bars

I’ve been experimenting over the past several months with gluten-free baking, and it’s more complicated than I anticipated.  The flours are all very particular and yield quite different results. Because I’m stubborn, I keep trying to create my own recipes instead of adapting from others.  There have been many failed muffin attempts.  It’s very frustrating, but I do like a challenge.

One recipe that I’ve successfully adapted is my vegan granola bars. Gluten-free oats are technically the same as regular oats, but they’re processed in a gluten-free facility.  These granola bars are delicious and if you’re trying to follow a gluten-free diet, they’re a great snack or breakfast option.  I swapped out a lot of other ingredients in this version and added some fun extras.  The figs and dates are chewy and sweet.  The cacao nibs add a touch of chocolate flavor and crunch.  You can easily swap out the Earth Balance for regular butter if you just want a vegetarian bar.  Enjoy!

Eggnog Pancakes ~ Savory Simple

I’m not usually a big fan of pancakes but wow these are good.  The eggnog fits wonderfully in place of buttermilk and adds a richness and depth of flavor you won’t normally find in a standard pancake recipe. They’re light, fluffy, and taste wonderful drizzled with maple syrup and a dusting of powdered sugar. Can you think of anything more perfect for a cozy holiday morning with family?

I am counting the hours until vacation.  I can’t wait!
